COMMENTS: This sauce is of course perfect for any style of pork. You could also smear it on some puff pastry, top with berries & bake for a quick dessert.
MAKES A MEDIUM JAR FULL
3 large green apples, peeled & sliced
1 cinnamon stick
2 tablespoons brown sugar
1 tablespoon lemon juice
zest of 1 lemon
Place all ingredients except zest in a medium saucepan and cover with water. Bring to the boil then simmer on low for 15 minutes.
Drain, remove spices, add zest and mash to make a sauce.
